Prepare the Beets
Preheat your oven to 400°F (200°C). Wash and trim the beet roots, removing any greens. Wrap each beet in aluminum foil and place them on a baking sheet.

Roast the Beets
Roast the beets in the preheated oven for about 45-60 minutes, or until they can be easily pierced with a fork. Remove from the oven and let them cool slightly.

Make Walnut Butter
In a skillet over medium heat, toast the walnuts for about 5 minutes, stirring frequently until fragrant. Allow to cool, then blend the toasted walnuts with unsalted butter until smooth. Season with salt and black pepper.

Peel and Slice Beets
Once the beets are cool enough to handle, unwrap them from the foil and peel off the skins. Slice the beets into wedges.

Plate the Dish
Arrange the beet wedges on a serving platter. Drizzle with olive oil and season with salt and black pepper. Dollop crème fraîche on top and add spoonfuls of walnut butter. Garnish with chopped chives.
