    Prepare the bread

    Preheat your oven to 200°C (about 400°F). Slice the baguette or Italian bread into 1-inch thick slices.

    Toast the bread

    Place the slices on a baking sheet and drizzle with 2 tablespoons of olive oil. Bake in the preheated oven for 5-7 minutes until golden and crispy.

    Prepare the tomato topping

    While the bread is toasting, dice the ripe tomatoes and place them in a bowl. Add chopped fresh basil, salt, and black pepper. Mix gently.

    Add cheese

    Tear the fresh mozzarella into small pieces and gently fold it into the tomato mixture.

    Garlic rub

    Remove the toasted bread from the oven and rub one side of each slice with the garlic cloves to impart flavor.

    Assemble the bruschette

    Spoon the tomato and mozzarella mixture generously onto the garlic-rubbed side of each toasted bread slice. Drizzle with the remaining olive oil.
