Preparation
Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Sauce
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Add Vegetables
Add the diced bell peppers and roasted tomatoes to the skillet. Cook for about 5-7 minutes until the peppers soften.
Combine Ingredients
Stir in the chopped kalamata olives, capers, and fresh basil. Season with salt and black pepper to taste. Let the sauce simmer on low heat for another 3-4 minutes.
Cooking the Salmon
Cook Until Golden
Cook the salmon for about 4-5 minutes on one side until golden brown. Carefully flip the fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serving
Combine Pasta and Sauce
In the skillet with the sauce, add the cooked pasta and toss to coat evenly with the sauce. Remove from heat.
Plate the Dish
Serve the pasta on plates and top each serving with a piece of seared salmon. Garnish with additional fresh basil if desired.
