Crust

1. Prepare the crust

Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined and crumbly.

2. Form the crust

Press the mixture into the bottom and up the sides of a 9-inch pie pan. Make sure it is evenly packed.

3. Bake the crust

Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from oven and let cool.

Filling

4. Make the filling

In a large mixing bowl, combine the sweetened condensed milk, key lime juice, egg yolks, and lime zest. Whisk together until smooth and well combined.

5. Pour the filling

Pour the filling mixture into the cooled crust, spreading it evenly.

6. Bake the pie

Bake the pie in the oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center. Remove from oven and let cool.

Topping

7. Whip the cream

In a medium bowl, use a hand mixer to whip the heavy whipping cream until soft peaks form. Gradually add powdered sugar and continue whipping until stiff peaks form.

8. Top the pie

Spread the whipped cream over the cooled pie filling evenly.

9. Garnish

Garnish the pie with lime wedges. Chill in the refrigerator for at least 2 hours before serving.
