Preparation
Season the Fillets
Start by seasoning the sole fillets with salt and black pepper on both sides. Set aside.
Prepare the Egg Mixture
In a shallow dish, beat the eggs until well blended.
Prepare the Flour
In another shallow dish, place the all-purpose flour.
Cooking
Melt Butter
Heat 2 tablespoons of butter in a large skillet over medium heat.
Batter the Fillets
Dredge each sole fillet in flour, shaking off the excess, then dip into the beaten eggs, allowing any excess to drip off.
Cook the Fillets
Place the battered fillet in the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
Keep Fillets Warm
Remove the cooked fillets from the skillet and keep them warm on a plate.
Serve
Pour the lemon butter sauce over the cooked fillets and garnish with chopped fresh parsley before serving.
