    Prepare the Seafood

    Clean and scrub the mussels and clams under running water. Remove beards from mussels. Set aside.

    Soak Saffron

    In a small bowl, soak saffron threads in a few tablespoons of warm broth to release their color and flavor.

Cooking

    Sauté Vegetables

    In a large paella pan or shallow skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, and sauté until softened, about 5 minutes.

    Add Garlic and Tomato

    Stir in minced garlic and diced tomato, cooking for an additional 2-3 minutes until fragrant.

    Incorporate Spices and Rice

    Add paprika, salt, and black pepper. Stir in the Bomba rice, ensuring it is well coated with the oil and vegetable mixture.

    Add Broth and Saffron

    Pour in the chicken or seafood broth and the soaked saffron along with its liquid. Bring to a boil, then reduce heat to low.

    Cook the Rice

    Let the rice simmer for about 15 minutes without stirring, allowing it to absorb the broth and develop a crust at the bottom.

    Add Seafood

    Arrange the mussels, clams, calamari, shrimp, and scallops on top of the rice. Cover the pan with a lid or foil, and cook for another 10-15 minutes, until the seafood is cooked and the mussels and clams have opened.

Serving

    Garnish and Serve

    Once cooked, remove the paella from heat, and let it rest for 5 minutes. Garnish with chopped parsley and serve with lemon wedges on the side.
