Prepare the Ingredients
Dice the chicken and pork into bite-sized pieces. Slice the chorizo and dice all the peppers and jalapeño.

Cook the Proteins
In a large paella pan or skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken and pork, seasoning with salt and pepper. Cook until browned and fully cooked, about 5-7 minutes. Remove from the pan and set aside.

Cook the Chorizo
In the same pan, add the sliced chorizo and cook for 3-4 minutes until slightly crispy. Remove and set aside with the chicken and pork.

Sauté the Vegetables
Add the remaining tablespoon of olive oil to the pan. Add the diced jalapeño, red bell pepper, and green bell pepper. Sauté for about 5 minutes until they begin to soften.

Add the Rice and Spices
Stir in the saffron rice, chipotle powder, and paprika. Cook for 1-2 minutes, stirring frequently to coat the rice with oil and spices.

Add the Broth
Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to a simmer.

Combine Everything
Return the cooked chicken, pork, and chorizo back to the pan. Stir to combine, then let simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid.

Final Seasoning and Serve
Taste and adjust seasoning with more salt and black pepper if needed. Allow to rest for 5 minutes before serving.
