Preparation
- 1
Prepare the Saffron
Soak the saffron threads in a small bowl with a couple of tablespoons of warm water. This will help release its color and flavor.
- 2
Chop Vegetables
Finely chop the onion, dice the red bell pepper, and mince the garlic. Set aside.
Cooking
- 3
Sauté the Aromatics
In a large paella pan or a wide skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
- 4
Add Bell Pepper
Add the diced red bell pepper and sauté for an additional 2-3 minutes until slightly softened.
- 5
Cook the Rice
Stir in the saffron rice, paprika, salt, and black pepper. Cook for 1-2 minutes, stirring frequently.
- 6
Add Broth
Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and cover. Let it simmer for about 15 minutes.
- 7
Add Shrimp and Prawns
After 15 minutes, remove the lid and gently fold in the shrimp and prawns, along with the green peas. Cover again and cook for an additional 5-7 minutes until the seafood is cooked through.
