Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and melt it in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Whip the Cream
In a large mixing bowl, pour in the heavy cream and whip it using a mixer until soft peaks form. Be careful not to over-whip.

Combine Egg Yolks and Sugar
In a separate bowl, whisk the egg yolks with the granulated sugar until it becomes pale and thick. Add the vanilla extract and a pinch of salt.

Combine Mixtures
Slowly fold the melted chocolate into the egg yolk mixture until well combined. Then gently fold in the whipped cream, being careful not to deflate the mixture.

Chill the Mousse
Divide the mousse mixture into serving dishes or cups. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Serve
Once set, top the mousse with additional whipped cream if desired. Serve chilled and enjoy!
