Prepare the Fries

Peel and cut the potatoes into thin fries. Soak them in cold water for 30 minutes to remove excess starch. Drain and pat dry.

Fry the Potatoes

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-6 minutes. Remove and drain on paper towels. Season with salt.

Cook the Steak

Preheat a grill or skillet over medium-high heat. Rub the steak with olive oil, salt, and black pepper. Cook the steak for 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing.

Make the Bearnaise Sauce

In a saucepan, melt 2 tbs of butter and add minced shallots. Sauté until soft. Add white wine vinegar and reduce by half. In a separate bowl, whisk egg yolks and water until frothy. Slowly add the vinegar mixture while whisking. Place the bowl over a pot of simmering water and whisk until thickened. Gradually add remaining butter, whisking continuously, then stir in chopped tarragon. Season with salt to taste.

Serve

Plate the sliced steak alongside the house fries and drizzle with bearnaise sauce.
