Seafood and Accompaniments

Method

Cooking Instructions

  1. 1

    Prepare the Seafood

Cut the haddock fillets into bite-sized pieces. In a bowl, combine the shrimp, scallops, and haddock. Drizzle with olive oil, lemon juice, minced garlic, salt, and black pepper. Toss to coat evenly and let marinate for 15 minutes.

  2. 2

    Skewering

Thread the marinated seafood onto the skewers, alternating between shrimp, scallops, and haddock pieces.

  3. 3

    Grilling

Preheat a grill or grill pan over medium-high heat. Once hot, add the skewers and grill for about 2-3 minutes per side until the seafood is cooked through and has nice grill marks.

  4. 4

    Prepare House Rice and Vegetables

Cook house rice according to package instructions. For vegetables, sauté your choice (like bell peppers, zucchini, and carrots) in olive oil until tender.

  5. 5

    Make Lobster Cream

In a small saucepan, heat 1 cup of heavy cream and gently simmer. Add cooked lobster meat, season with salt and pepper, and stir until warmed through.

  6. 6

    Serve

Plate the grilled seafood skewers alongside the house rice and sautéed vegetables. Drizzle the lobster cream over the skewers and serve immediately.
