Prepare the Brussels Sprouts
Preheat your oven to 425°F (220°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut larger sprouts in half to ensure even cooking.

Season the Sprouts
In a large mixing bowl, toss the Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the edges are crispy and the sprouts are tender, tossing halfway through.

Add Truffle Oil and Parmesan
Once roasted, remove the Brussels sprouts from the oven and drizzle with truffle oil. Toss to combine, then sprinkle with shaved Parmesan and fresh herbs.
