Prepare the batter
In a large bowl, mix together the flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add the cold water, whisking until smooth. The batter should be thick enough to coat the seafood.

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and float to the top.

Dip the shrimp, calamari, and fish fillets into the batter, allowing any excess to drip off. Carefully place them into the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-5 minutes per batch.
