Preparing the Base

Make Sugar Syrup
In a medium saucepan, combine 2 cups of water and 1 cup of granulated sugar. Heat over medium, stirring until the sugar completely dissolves.

Preparing Strawberries

Prepare Strawberries
Wash and hull 2 cups of fresh strawberries. Place them in a blender or food processor.

Make Strawberry Puree
Blend the strawberries until smooth. If desired, strain the puree through a fine mesh sieve to remove seeds. You should have about 1 cup of strawberry puree.
Combining and Freezing

Combine Ingredients
In a large mixing bowl, combine the cooled lemon mixture with the strawberry puree. Mix well until fully incorporated.

Freeze the Mixture
Pour the mixture into a shallow dish and place it in the freezer. After about 1 hour, stir the mixture with a fork to break up any ice crystals.

Final Freeze
Continue to freeze for another 3-4 hours, stirring every 30 minutes, until the Italian ice is firm and fluffy.

Scoop the strawberry Italian ice into serving bowls or cups. Garnish with fresh mint leaves if desired and enjoy!
