Base Preparation
1. Make the Sugar Syrup
In a medium saucepan, combine 1 cup of granulated sugar and 4 cups of water. Bring to a boil over medium heat, stirring until the sugar is completely dissolved. Once boiling, remove from heat and let it cool to room temperature.
2. Add Lemon Juice
Once the sugar syrup has cooled, stir in 1 cup of fresh lemon juice until well combined.
Flavoring the Base
3. Prepare Flavors
Choose your desired fruit flavor. For strawberry, blueberry, or raspberry, puree the fresh fruit until smooth. For mint, chop the leaves finely. For pineapple, use ready-made juice. For coconut, simply measure out the coconut milk.
4. Combine Flavors
In a large bowl, combine the cooled lemon syrup with your chosen flavor. For example, for strawberry Italian ice, mix 2 cups of pureed strawberries into the lemon syrup and stir until fully incorporated.
Freezing Process
5. Chill the Mixture
Pour the flavored mixture into a shallow baking dish or a large container. Place it in the freezer.
6. Stir Regularly
After 30 minutes, use a fork to stir and scrape the mixture. Continue to freeze for 2-3 hours, scraping every 30 minutes until the mixture is fluffy and resembles a slushy consistency.
7. Serve
Once the Italian ice is fully frozen and fluffy, scoop it into serving bowls or cones and enjoy!
