Cooking the Pasta
1. Boil the Penne
In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.
Making the Sauce
2. Cook the Sausage
In a large skillet over medium heat, add the olive oil. Once heated, add the Italian sausage and cook until browned, about 5-7 minutes.
3. Add Vegetables
Add the minced garlic and diced red bell pepper to the skillet with the sausage. Sauté for about 2-3 minutes until fragrant.
4. Combine Sauce Ingredients
Stir in the crushed tomatoes, tomato paste, red pepper flakes, dried oregano, salt, and black pepper. Simmer for 10-15 minutes, stirring occasionally.
Assembling the Ziti
5. Mix Pasta and Sauce
In a large mixing bowl, combine the cooked penne pasta with the spicy sausage sauce. Mix well to ensure the pasta is fully coated.
6. Layer with Cheese
Transfer half of the pasta mixture to a baking dish. Sprinkle with half of the mozzarella and provolone cheese. Add the remaining pasta and top with the rest of the cheeses.

7. Bake the Ziti
Preheat the oven to 375°F (190°C). Bake the ziti for 25-30 minutes until the cheese is bubbly and golden.
