Prepare the Shrimp

In a bowl, combine the shrimp with olive oil, minced garlic, Calabrian chiles, preserved lemon, salt, and black pepper. Toss to coat the shrimp evenly and let marinate for 15 minutes.

Prepare the Breadcrumb Topping

In a separate bowl, mix the breadcrumbs with chopped parsley, basil, and a drizzle of olive oil. Set aside.

Preheat the Wood-Fired Oven

Prepare your wood-fired oven and preheat it to around 450°F (232°C). If using a grill, heat it to medium-high.

Cook the Shrimp

Thread the marinated shrimp onto skewers. Place the skewers in the wood-fired oven and cook for about 2-3 minutes on each side, until the shrimp are pink and opaque.

Add the Breadcrumb Topping

In the last minute of cooking, sprinkle the breadcrumb mixture over the shrimp on the skewers and let it toast slightly.

Serve

Remove the skewers from the oven, let them cool slightly, and serve warm with lemon wedges and extra herbs if desired.
