Prepare the Ingredients

Chop the onion and garlic. Halve the dried apricots and pit the Kalamata olives.

Sear the Chicken

In a large skillet, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Sear the chicken on both sides until golden brown, about 5 minutes per side. Remove from skillet and set aside.

Cook the Aromatics

In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent.

Combine Ingredients

Add the cumin, cinnamon, and paprika to the skillet, stirring for about 1 minute until fragrant. Pour in the chicken broth, then add the Kalamata olives and dried apricots back into the skillet.

Simmer

Return the chicken to the skillet. Cover and let it simmer for 30 minutes on low heat until the chicken is cooked through and tender.

Garnish and Serve

Sprinkle with fresh parsley before serving. Enjoy with couscous or crusty bread.
