Prepare the Octopus

In a large pot, bring salted water to a boil. Add the octopus and simmer for about 30-40 minutes, or until tender. Drain and let cool.

Cook the Potatoes

In a separate pot, boil diced potatoes until tender, about 10-15 minutes. Drain and set aside.

Prepare the Marinade

In a bowl, combine olive oil, sumac, harissa, salt, and black pepper. Mix well.

Marinate the Octopus

Cut the cooled octopus into bite-sized pieces and add to the marinade. Toss to coat and let marinate for at least 30 minutes.

Grill the Octopus

Preheat the grill to medium-high heat. Grill the marinated octopus for about 3-4 minutes on each side until charred and slightly crispy.

Combine Ingredients

In a large serving bowl, combine grilled octopus, boiled potatoes, sliced onion, and Castelvetrano olives. Toss gently.

Garnish and Serve

Top with fresh herbs and an additional drizzle of olive oil. Serve warm.
