Heat the Mixture
In a large saucepan over medium heat, combine the whole milk and heavy cream. Heat the mixture until it is hot but not boiling, stirring occasionally.
Add Vinegar and Salt
Once the milk and cream mixture is hot, remove it from the heat and stir in the white vinegar and salt. Let it sit for about 5 minutes to allow curds to form.
Strain the Curds
Line a fine-mesh strainer with cheesecloth and place it over a bowl. Carefully pour the curdled mixture into the strainer, allowing the whey to drain off. Let it drain for about 10-15 minutes.
Finish the Ricotta
Transfer the ricotta to a mixing bowl and stir gently to combine. You can add a pinch of salt to taste if desired.
