Prepare the Couscous Salad

In a medium saucepan, bring water to a boil. Add couscous, salt to taste, and cover. Remove from heat and let it sit for about 5 minutes, then fluff with a fork.

Mix the Salad

In a bowl, combine the fluffed couscous, preserved lemon, fresh herbs, and a tablespoon of olive oil. Mix well and set aside.

Prepare the Salmon

Preheat your oven to 400°F (200°C). Pat the salmon fillets dry with paper towels and season with salt and pepper.

Coat the Salmon

In a bowl, combine falafel mix and breadcrumbs. Press this mixture onto the top of each salmon fillet to create an even crust.

Bake the Salmon

Place the crusted salmon fillets on a baking sheet lined with parchment paper. Drizzle with the remaining olive oil and bake for 15-20 minutes or until the salmon is cooked through and the crust is golden.

Plate the couscous salad and top each serving with a piece of falafel-crusted salmon. Enjoy your meal!
