1. Prepare the Filling

In a mixing bowl, combine the chopped parsley, cilantro, onion, tomato, lemon juice, and olive oil. Season with salt and black pepper. Mix well until all ingredients are evenly combined.

2. Prepare the Chili Peppers

Carefully slice the green chili peppers lengthwise, making sure not to cut all the way through. Remove the seeds if you prefer less heat.

3. Stuff the Peppers

Fill each chili pepper with the herb mixture, pressing it gently to ensure it's packed inside.

4. Cooking

Heat a grill or a skillet over medium heat. Place the stuffed chili peppers on the grill and cook for about 10-12 minutes, turning occasionally until they are tender and slightly charred.
