Prepare the Ingredients

Chop the onion, slice the carrots, cube the potatoes, and mince the garlic.

Sauté the Beef

In a large pot, heat the olive oil over medium-high heat. Add the cubed beef and brown on all sides. Remove the beef and set aside.

Cook the Vegetables

In the same pot, add the chopped onion and sauté until translucent. Add the garlic and cook for another minute. Then add the carrots and potatoes.

Add the Beef and Broth

Return the browned beef to the pot. Stir in the tomato paste, beef broth, bay leaves, salt, and black pepper. Bring to a boil.

Simmer the Stew

Reduce the heat to low and cover the pot. Let it simmer for about 1.5 hours, or until the beef is tender.

Finish and Serve

Remove the bay leaves. Stir in the chopped parsley and adjust seasoning as needed. Serve hot.
