    Prepare the Split Peas

    Rinse the yellow split peas under cold water. In a pot, combine the split peas and 3 cups of water. Bring to a boil, then reduce the heat and simmer for about 30 minutes until soft. Drain and set aside.

    Make the Sauce

    In a blender, combine the cooked split peas, onion, garlic, ginger, and a bit of water. Blend until smooth. Adjust seasoning with salt and pepper to taste.

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, baking powder, salt, and pepper. Gradually add 1 cup of water to form a smooth batter.

    Fry the Onion Rings

    Heat the oil in a deep frying pan over medium heat. Slice the onion into rings. Dip each onion ring into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    Serve

    Serve the battered onion rings with the split pea sauce as a dipping sauce.
