Finely minced Tilapia fish seasoned with tomato, onions & peppers. Served with your choice of injera or rice.
Finely mince the Tilapia fillets using a sharp knife or a food processor until they reach a paste-like consistency.
In a large skillet, heat olive oil over medium heat. Add chopped onions, bell pepper, and garlic, and sauté until softened, about 5 minutes.
Stir in the diced tomatoes, ginger, salt, and black pepper. Cook for another 5 minutes until the tomatoes are soft and the mixture is fragrant.
Add the minced Tilapia to the skillet. Stir well to combine and cook for about 5-7 minutes, or until the fish is fully cooked through.
Remove from heat and stir in the lemon juice and chopped cilantro. Adjust seasoning if needed.
Serve hot with your choice of injera or rice.
