    Prepare the Ingredients

    Chop the onion, tomatoes, and mince the garlic. Set aside.

    Cook the Onions

    In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are translucent, about 5-7 minutes.

    Add Garlic and Spices

    Stir in the minced garlic, turmeric, cumin, coriander, chili powder, and salt. Cook for another 2-3 minutes until fragrant.

    Add Tomatoes

    Add the chopped tomatoes to the pot and simmer for about 10 minutes until the tomatoes break down and create a sauce.

    Cook the Fish

    Gently add the asa (fish) to the pot, ensuring it is well coated with the sauce. Cover and simmer for 10-15 minutes until the fish is cooked through.

    Serve

    Serve the fish gulash hot with injera or rice.
