Tegabino Shiro is a rich and hearty Ethiopian stew made from ground chickpeas, garlic, and a blend of aromatic spices, served with injera for a delightful culinary experience.
In a bowl, mix teff flour, water, and salt until smooth. Let it sit for 30 minutes.
Heat a non-stick skillet over medium heat. Pour in a ladleful of the teff batter and cook until bubbles form on the surface. Flip and cook until golden brown. Repeat with remaining batter.
In a large pot, heat vegetable oil over medium heat. Add chopped onions and sauté until translucent. Add garlic, ginger, and berbere spice blend, and cook for an additional 2-3 minutes.
Stir in the cooked chickpeas and chopped spinach. Cook until the spinach is wilted and everything is heated through, about 5-7 minutes.
Serve the chickpea and spinach mixture over the cooked teff pancakes.
