Cooking Instructions

  1. 1

    Prepare the Teff batter

In a bowl, mix teff flour, water, and salt until smooth. Let it sit for 30 minutes.

  2. 2

    Cook the Teff batter

Heat a non-stick skillet over medium heat. Pour in a ladleful of the teff batter and cook until bubbles form on the surface. Flip and cook until golden brown. Repeat with remaining batter.

  3. 3

    Sauté the vegetables

In a large pot, heat vegetable oil over medium heat. Add chopped onions and sauté until translucent. Add garlic, ginger, and berbere spice blend, and cook for an additional 2-3 minutes.

  4. 4

    Add chickpeas and spinach

Stir in the cooked chickpeas and chopped spinach. Cook until the spinach is wilted and everything is heated through, about 5-7 minutes.

  5. 5

    Serve

Serve the chickpea and spinach mixture over the cooked teff pancakes.
