Prepare the Pork

Season the Pork
In a small bowl, mix together salt, black pepper, paprika, brown sugar, garlic powder, and onion powder. Rub this spice mix all over the pork shoulder.

Smoke the Pork
Place the seasoned pork shoulder in a smoker at 225°F (107°C) for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).

Make the BBQ Sauce

Combine Ingredients
In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, black pepper, and hot sauce. Stir well.

Simmer the Sauce
Bring the mixture to a simmer and allow it to cook for about 15-20 minutes, stirring occasionally until it thickens slightly.
Assemble the Sandwich

Mix the Pork with Sauce
In a large bowl, combine the pulled pork with the prepared BBQ sauce until well coated.

Prepare the Buns
Toast the buns lightly on a grill or in a toaster.

Build the Sandwich
Place a generous portion of BBQ pulled pork on the bottom half of each toasted bun. Top with pickles and optional coleslaw.

Cover with the top half of the bun and serve immediately.
