Method

For the Banana Cake

1

Prepare the Bananas

Preheat your oven to 350°F (175°C). In a mixing bowl, mash the ripe bananas until smooth. Set aside.

2

Mix the Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

3

Cream the Butter and Sugar

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

4

Add Eggs and Bananas

Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract. Mix until combined.

5

Combine Dry and Wet Ingredients

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not over mix.

6

Bake the Cake

Pour the batter into a greased 9x13 inch baking pan. Bake for 30-35 minutes or until a toothpick comes out clean. Let it cool completely.

For the Browned Butter Cream Cheese Frosting

7

Brown the Butter

In a saucepan, melt the butter over medium heat. Continue cooking, stirring frequently, until the butter turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.

8

Mix the Frosting

In a mixing bowl, beat the cream cheese until smooth. Gradually add the browned butter, followed by the powdered sugar and vanilla extract. Beat until creamy and fluffy.

9

Frost the Cake

Once the cake is completely cooled, spread the frosting evenly over the top using a spatula.

For the Candied Pecans

10

Prepare the Sugar Mixture

In a saucepan, combine sugar, water, and cinnamon. Cook over medium heat, stirring until the sugar dissolves.

11

Candy the Pecans

Add the pecan halves to the syrup and stir to coat. Continue cooking until the mixture thickens and coats the pecans, about 10 minutes.

12

Cool the Pecans

Spread the candied pecans on a parchment-lined baking sheet to cool completely.

For the Caramel Sauce

13

Make the Caramel

In a saucepan over medium heat, combine the granulated sugar with a splash of water. Cook until the sugar melts and turns amber in color, swirling the pan occasionally.

14

Add Cream and Butter

Remove from heat and carefully whisk in the heavy cream and unsalted butter. Add a pinch of salt and the vanilla extract. Stir until smooth.

15

Drizzle Over Cake

Once the caramel sauce has cooled slightly, drizzle it over the frosted banana cake and top with candied pecans.
