Make the Pie Crust
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling
In another bowl, combine the seasonal fruit, sugar, cinnamon, cornstarch, and lemon juice. Toss to coat the fruit evenly and set aside.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one disk of dough on a floured surface to fit a 9-inch pie pan. Place the crust in the pan and fill it with the fruit mixture. Roll out the second disk of dough and place it over the filling. Cut slits in the top crust for steam to escape, and brush with a beaten egg.

Bake the Pie
Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the crust is golden and the filling is bubbly. Let it cool before serving.
