    Prepare the Beef

    Preheat your oven to 325°F (163°C). Take the beef round roast and pat it dry with paper towels. Rub the olive oil all over the roast, then season generously with salt and black pepper.

    Add Flavor

    Mince the garlic cloves and chop the fresh rosemary. Rub the minced garlic and chopped rosemary onto the beef, ensuring it's evenly coated.

    Sear the Roast

    In a large oven-safe skillet, heat a bit more olive oil over medium-high heat. Once hot, sear the beef on all sides until browned, about 3-4 minutes per side.

    Prepare Vegetables

    While the beef is searing, chop the carrots, onion, and potatoes into large chunks.

    Add Vegetables and Broth

    Once the beef is seared, remove it from the skillet. Add the chopped vegetables to the skillet and pour in the beef broth. Place the seared beef on top of the vegetables.

    Roast

    Cover the skillet with a lid or aluminum foil and place it in the preheated oven. Roast for about 2.5 to 3 hours, or until the internal temperature of the beef reaches 135°F (57°C) for medium-rare.

    Once cooked, remove the roast from the oven and let it rest for 15 minutes before slicing. Serve the beef with the roasted vegetables.
