Preparation Steps

    Prepare the Filling

    In a skillet, heat 2 tablespoons of vegetable oil over medium heat. Add the diced onion and sauté until translucent. Remove from heat and set aside.

    Prepare the Tortillas

    In another skillet, heat the remaining vegetable oil over medium heat. Briefly fry each corn tortilla for about 10-15 seconds on each side until soft. Drain on paper towels to remove excess oil.

    Assemble the Enchiladas

    Spread a small amount of red chile sauce on the bottom of a baking dish. Take a tortilla, place a spoonful of the sautéed onion and a handful of shredded cheese in the center, then roll it up and place it seam-side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all the enchiladas are in the dish, pour the remaining red chile sauce over the top and sprinkle with any remaining cheese.

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.

    Serve

    Once baked, remove from the oven, garnish with fresh cilantro, and serve hot.
