    Prepare the Pork

    In a large pot or Dutch oven, add the pork shoulder and cover it with water. Bring to a boil, then reduce heat and simmer for about 1.5 hours or until the pork is tender.

    Shred the Meat

    Once the pork is cooked, remove it from the pot, let it cool slightly, and then shred it using two forks. Discard excess fat.

    Build the Base

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent.

    Combine Ingredients

    Return the shredded pork to the pot, then add hominy, chicken broth, El Pinto red chile powder, cumin, salt, and pepper. Stir well to combine.

    Simmer the Posole

    Bring the mixture to a boil, then reduce heat and let it simmer for 30-40 minutes to allow flavors to meld.

    Serve

    Ladle the posole into bowls and serve hot with warm corn tortillas on the side.
