    Sauté the Base

    In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Brown the Pork

    Add the cubed pork shoulder to the pot. Cook until the pork is browned on all sides, about 8-10 minutes.

    Add Potatoes and Seasoning

    Stir in the diced potatoes, chopped green chiles, cumin, oregano, salt, and black pepper. Mix well.

    Simmer

    Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the pork is tender.

    Serve

    Once the stew is ready, taste and adjust seasoning if necessary. Serve hot in bowls.
