    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add minced garlic, cumin, salt, and pepper, and cook for an additional minute. Stir in the canned green chiles and half of the shredded cheese. Remove from heat.

    Assemble the Enchiladas

    Preheat the oven to 375°F (190°C). Take a corn tortilla, fill it with a generous portion of the filling, and roll it tightly. Place the rolled tortilla seam-side down in a greased baking dish. Repeat until all tortillas are filled and placed in the dish.

    Add Sauce and Bake

    Pour the green enchilada sauce evenly over the rolled tortillas. Spread the remaining shredded cheese on top. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and slightly golden.

    Serve

    Remove from the oven and let cool for a few minutes. Serve warm, topped with sour cream.
