    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Sauté the Onion

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

    Mix Ingredients

    In a large bowl, combine shredded chicken, black beans, corn, garlic powder, cumin, salt, and pepper. Mix well.

    Layer the Casserole

    In a 9x13 inch baking dish, spread a thin layer of enchilada sauce on the bottom. Place 4 tortillas on top, followed by half of the chicken mixture, and then sprinkle with 1 cup of cheese. Repeat the layers (tortillas, chicken mixture, cheese). Finish with the remaining tortillas, enchilada sauce, and top with the remaining cheese.

    Bake

    Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

    Let the casserole cool for a few minutes before slicing. Serve warm.
