For the Flan

For the Levante

Method

Flan Preparation

  1. 1

    Make the Caramel

In a saucepan over medium heat, melt the sugar until it turns golden brown. Quickly pour it into a round baking dish, tilting to coat the bottom evenly.

  2. 2

    Mix the Flan Ingredients

In a blender, combine sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth.

  3. 3

    Bake the Flan

Pour the flan mixture over the caramel in the baking dish. Place the dish in a larger baking pan filled with water (water bath) and bake at 350°F (175°C) for about 50 minutes or until set.

  4. 4

    Cool and Serve

Remove from the oven and let it cool. Once cooled, refrigerate for at least 4 hours. To serve, run a knife around the edges and invert onto a plate.

Levante Preparation

  1. 5

    Prepare the Mixture

In a saucepan, combine semolina flour, sugar, and water. Cook over medium heat, stirring constantly until it thickens.

  2. 6

    Add Flavor

Once thickened, remove from heat and stir in the rose water and butter until well combined.

  3. 7

    Set the Levante

Pour the mixture into a greased dish and spread evenly. Allow it to cool and set for about 1 hour.

  4. 8

    Garnish and Serve

Once set, cut into squares and garnish with pine nuts before serving.
