Prepare the Adovada Marinade
In a dry skillet, toast the dried New Mexico chiles over medium heat until fragrant, about 2-3 minutes. Remove from heat, stem and seed the chiles.

Blend the Marinade
In a blender, combine the toasted chiles, garlic, cumin, oregano, apple cider vinegar, olive oil, salt, and black pepper. Blend until smooth, adding a splash of water if necessary to achieve a pourable consistency.

Marinate the Wings
Place the chicken wings in a large bowl or resealable bag. Pour the adovada marinade over the wings, ensuring they are well coated. Seal and refrigerate for at least 72 hours, turning occasionally.

Prepare for Cooking
Preheat the oven to 400°F (200°C). Line a baking sheet with foil and place a rack on top.

Bake the Wings
Remove the wings from the marinade, allowing excess to drip off. Place the wings in a single layer on the rack. Bake for 40-45 minutes or until crispy and cooked through, turning halfway.

Serve
Remove from the oven and let rest for a few minutes. Serve hot with your favorite dipping sauce.
