Prepare the Cheddar Cheese Sauce
In a saucepan over medium heat, melt the sweet cream butter. Once melted, add the flour and whisk continuously for about 2 minutes. Gradually add the milk, whisking until smooth and thickened. Stir in the New York cheddar cheese until melted and combined. Season with salt and black pepper to taste.

Prepare the Scallions
While the potatoes are baking, wash and chop the scallions, separating the green tops from the white parts.

Assemble the Tableside Baked Potato
Once the potatoes are done baking, remove them from the oven and let cool slightly. Cut a slit on the top of each potato and gently squeeze the ends to open them up. Add a generous amount of the cheddar cheese sauce and top with chopped scallions.

Serve the tableside baked potatoes warm, allowing guests to add extra toppings or seasonings as desired.
