Mud Cake

Method

Preparation

1

Prepare the Cake

Preheat your oven to 160°C (320°F). Grease and line a 9-inch round cake pan with parchment paper.

2

Melt Butter and Chocolate

In a saucepan over low heat, melt the unsalted butter and dark chocolate together until smooth. Remove from heat and let it cool slightly.

3

Combine Sugars and Eggs

In a large mixing bowl, combine the granulated sugar, brown sugar, and eggs. Whisk until well combined.

4

Mix in Chocolate Mixture

Pour the melted chocolate mixture into the sugar and egg mixture. Stir until combined.

5

Sift Dry Ingredients

In another bowl, sift together the flour, cocoa powder, baking powder, and salt.

6

Combine Wet and Dry Ingredients

Gradually fold the dry ingredients into the wet mixture. Add the vanilla extract and mix until just combined.

7

Bake the Cake

Pour the batter into the prepared cake pan and bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.

8

Cool and Glaze

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack. Once cool, pour the chocolate glaze over the cake.

9

Serve with Ice Cream

Slice the cake and serve with a scoop of vanilla bean ice cream and a sprinkle of candied cocoa nibs.
