Prepare the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 30-40 minutes.

Add Garlic and Deglaze

Add the minced garlic and cook for another 2 minutes. Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

Add Broth and Seasonings

Stir in the beef broth, thyme, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and let it simmer for at least 30 minutes to let the flavors meld.

Prepare the Bread

While the soup is simmering, preheat your oven to 400°F (200°C). Place the sliced baguette on a baking sheet and toast in the oven until golden brown, about 10 minutes.

Assemble the Soup

Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle generously with grated Gruyère cheese.

Place the bowls under the broiler for 2-3 minutes until the cheese is bubbly and golden. Serve hot and enjoy your hearty French onion soup!
