Preparation of Crab Cakes

    Combine Ingredients

    In a large bowl, gently mix together the Dungeness crab meat, panko breadcrumbs, mayonnaise, Dijon mustard, Worcestershire sauce, eggs, green onions, parsley, lemon zest, salt, and black pepper until just combined. Be careful not to over-mix.

    Form the Cakes

    Divide the mixture into equal portions and form into cakes, about 3 inches in diameter. Place the cakes on a baking sheet lined with parchment paper.

    Chill the Cakes

    Cover the baking sheet with plastic wrap and refrigerate for at least 30 minutes to help the cakes hold their shape.

    Cook the Cakes

    In a large skillet, heat the olive oil over medium heat. Once hot, add the crab cakes and cook for about 4-5 minutes on each side, or until golden brown and cooked through.

    Serve

    Remove the crab cakes from the skillet and serve warm with charred lemon-herb aioli and pickled peppers.
