Prepare the Brussels Sprouts

Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Cook the Bacon

In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon and place it on paper towels to drain. Reserve about 1 tablespoon of the bacon drippings in the skillet.

Season the Sprouts

In the same skillet, add the trimmed Brussels sprouts and drizzle with olive oil. Sprinkle the diablo spice, salt, and black pepper. Toss well to coat.

Roast the Brussels Sprouts

Spread the seasoned Brussels sprouts on a baking sheet in a single layer and roast in the preheated oven for about 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

Combine with Bacon

Once the Brussels sprouts are done, remove them from the oven and crumble the crispy bacon over the top. Drizzle with pomegranate molasses and toss gently to combine.
