Bread Pudding

Method

Preparation

  1. 1

    Prepare the Bread

Preheat your oven to 350°F (175°C). Cut the stale bread into cubes and place them in a large mixing bowl.

  2. 2

    Make the Custard Mixture

In a separate bowl, whisk together the heavy cream, whole milk, Baileys Irish Cream, granulated sugar, vanilla extract, eggs, and cinnamon until well combined.

  3. 3

    Combine Bread and Custard

Pour the custard mixture over the bread cubes and let it soak for 15-20 minutes, stirring occasionally to ensure all the bread is saturated.

  4. 4

    Bake the Pudding

Transfer the mixture to a greased baking dish and bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the custard is set.

  5. 5

    Make the Bourbon Caramel Sauce

In a saucepan, combine 1 cup of granulated sugar and 1/4 cup of water. Cook over medium heat until the sugar dissolves and turns a deep amber color. Remove from heat and carefully stir in 1/4 cup of bourbon. Allow to cool slightly.

  6. 6

    Serve

Serve warm slices of the bread pudding topped with a scoop of vanilla bean ice cream, a drizzle of bourbon caramel sauce, and fresh berries.
