Mocha Torte Directions
- 1
Prepare the Cake Layers
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
In a large mixing bowl, combine flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- 3
- 4
Stir in hot water until the batter is smooth. Pour the batter into prepared pans.
- 5
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks to cool completely.
- 6
Make the Coffee Buttercream
In a large bowl, beat the unsalted butter until creamy.
- 7
Gradually add powdered sugar and beat until fluffy.
- 8
Add brewed coffee and mix until well combined. Adjust the consistency with more powdered sugar if needed.
- 9
Assemble the Torte
Place one chocolate cake layer on a serving platter. Spread a layer of apricot jam on top.
- 10
Add a layer of coffee buttercream over the jam, then place the second cake layer on top.
- 11
Frost the top and sides of the torte with the remaining coffee buttercream.
- 12
Chill for 30 minutes before serving to set the buttercream.
