1. Prepare the Schnitzel
Flatten the pork loin or chicken breast between two sheets of plastic wrap using a meat mallet until about 1/2 inch thick.
2. Season the Meat
Season both sides of the flattened meat with salt and black pepper.
3. Set Up Breading Station
Set up a three-step breading station: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs in the third.
4. Bread the Schnitzel
Dredge each piece of meat in flour, shaking off excess, dip in beaten eggs, and then coat with breadcrumbs, pressing gently to adhere.
5. Fry the Schnitzel
In a large skillet, heat vegetable oil over medium heat. Fry each schnitzel for about 3-4 minutes per side or until golden brown and cooked through. Drain on paper towels.
6. Serve
Serve the schnitzel hot with lemon wedges and garnish with fresh parsley.
