Preparation and Cooking Steps
Prepare the Meat
If using pork loin, slice it into thin cutlets (about 1/2 inch thick). If using chicken breast, you may want to pound it to an even thickness. Season both sides with salt and pepper.
Set up Breading Station
Place the flour in one shallow dish, beat the eggs in another shallow dish, and place the breadcrumbs in a third dish.
Bread the Cutlets
Dredge each cutlet in flour, shaking off the excess. Dip into the beaten eggs, allowing the excess to drip off, and then coat with breadcrumbs, pressing lightly to adhere.
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. You want enough oil to cover the bottom of the pan.
Drain and Serve
Once cooked, remove the schnitzels and place them on paper towels to drain excess oil. Serve hot with lemon wedges on the side.
