Prepare the Dough
In a large mixing bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in cold water, one tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Roll Out the Dough
On a floured surface, roll out the chilled dough to 1/8 inch thickness. Cut into desired shapes for pastries.

Fill and Bake
Fill pastry shapes with desired fillings (e.g., fruit preserves, chocolate, or cream cheese). Fold or seal edges, then place on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes or until golden brown.

Cool and Serve
Allow pastries to cool on a wire rack before serving. Enjoy fresh or store in an airtight container.
