Prepare the Dough
In a large bowl, combine the all-purpose flour and salt. Add the olive oil and water, and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Preheat the Oven
Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.
Roll Out the Dough
After resting, roll out the dough on a floured surface until it's very thin, about 1/8 inch thick. Transfer it onto a parchment-lined baking sheet or a pizza peel if using a stone.
Add Toppings
Spread the crème fraîche evenly over the surface of the rolled-out dough. Evenly distribute the thinly sliced onions and chopped bacon on top. Season with freshly ground black pepper.
Bake
Transfer the prepared flammekuchen to the oven (or onto the pizza stone) and bake for 10-12 minutes or until the edges are golden brown and crispy.
Serve
Remove from the oven, slice, and serve hot. Enjoy your Flammekuchen!
