Cheesecake Filling

    Prepare the Crust

    Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

    Bake the Crust

    Bake the crust in the preheated oven for 10 minutes. Remove from oven and let it cool while preparing the filling.

    Prepare the Filling

    In a large mixing bowl, beat together the cream cheese until smooth. Gradually add in the sugar, mixing until well blended. Add in the sour cream and vanilla extract, mixing until combined.

    Add Eggs

    Add eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

    Pour and Bake

    Pour the cheesecake filling over the cooled crust. Bake in the oven for 50-60 minutes or until the center is set and slightly jiggles. Turn off the oven and let the cheesecake cool inside for 1 hour.

    Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Once chilled, remove from the springform pan, slice, and serve.
